Peach Wine - 5 Gallon Recipe

  1. 12.5 lbs of peaches
  2. 4.4 gallons of water (16.5 litres)
  3. 10 lbs of sugar
  4. 7.5 tsp of Acid Blend
  5. 5 tsp of Pectic Enzyme
  6. 1 ¼ tsp of Tannin
  7. 2 ½ tsp of Yeast Energizer
  8. 10 Campden Tablets
  9. 1 pkg of Wine yeast

Starting S.G. 1.085-1.090

  1. Wash your peaches and remove the cores as well as any bruised or brown patches. If you have a peach that you wouldn’t eat because of bruising or rot, then you also wouldn’t want it in your wine.
  2. Press out the peach juice in a fruit press or with a nylon straining bag - make sure to save the pulp.
  3. Transfer the peach juice into a sanitized primary fermenter.
  4. Place the pulp in a sanitary mesh bag and tie it up. Add this to the fermenter as well.
  5. Add in the sugar, Acid Blend, Pectic Enzyme, Tannin, Yeast Energizer, and 5 campden tablets. Mix well.
  6. Wait 24 hrs and add yeast.
  7. Attach airlock and place in a warm temperature area (within the recommended temperature of the yeast.)
