Calcium Sulfate (Gypsum) is used to add calcium ions to brewing water to permanently harden it. Calcium is beneficial in most steps of the brewing phase. Its benefits have been noted from its positive affect on alpha amylase enzymes in the mash to the boil to fermentation and yeast flocculation.
