Add 1 tablet for every gallon (produces 50ppm of SO2 in 1 gallon). These have been used for years to kill wild yeasts in fruit (and grape) wines and to stabilize finished wines. Many raw fruit recipes call for the addition of crushed Campden tablets at various stages of the recipe. Use as per package instructions. Replace every year.
