When fermenting high alcohol a number of additives may be required or beneficial to you.
Acid is a key component in fermentation as it is required by your yeast as sugar is converted into alcohol. If your fermentation stalls out before your yeast’s alcohol tolerance level is reached, this may be because there is not enough acid in your wash.
Nutrients and Energizers are present in most high quality specialized yeasts like Turbo Yeasts, but more may be necessary in some cases and it is a must have when using yeasts that aren’t specially tailored for high-alcohol or low-nutrient environments. If you are using just sugar and water for your wash, there will not be enough nutrients present for say, an average wine yeast to ferment all the way through unless you add nutrients. Energizers can also help boost sluggish fermentation, but are not a replacement for acids if the alcohol level is already high.
Stabilizers and Clarifiers are necessary if you want to stabilize your wash by neutralizing the yeast, or clear your wash with kieselsol or chitosan in place of, or prior to, carbon filtering.
