Apple Cider - 5 Gallon Recipe
Ingredients:
- 70-80 lbs of apples or 5 gallons of juice.
- 1 ⅔ lb of sugar
- 2 ½ tsp of Pectic Enzyme
- 2 ½ tsp of Yeast Energizer
- 5 campden tablets
- 1 pkg of champagne yeast
Directions (Whole Apples):
- When making apple cider with fresh apples ensure that only ripe, firm ones are used that are free of any rot. If you wouldn’t want to eat it, then you shouldn’t use it in your cider.
- Wash your chosen apples. High acid content apples like McIntosh or Jonathans tend to work the best.
- Press the juice from the apples with a fruit press. Cutting the apples into smaller pieces first helps with this process.
- Transfer the juice into your sanitized primary fermenter.
- Add sugar pectic enzyme, yeast energizer, and campden tablets. Mix well.
- Wait 24 hrs and add yeast.
- Attach airlock and place in a warm temperature area (within the recommended temperature of the yeast.)
Directions (Pre-pressed Juice)
- When making apple cider with fresh apple juice ensure that no preservatives have been added. Preservatives may prevent fermentation from occurring.
- Transfer your juice into a sanitized primary fermenter.
- Add sugar, pectic enzyme, yeast energizer, and campden tablets. Mix well.
- Wait 24 hrs and add yeast.
- Attach airlock and place in a warm temperature area (within the recommended temperature of the yeast.)
